In 2013 some of the most famous and appreciated Italian wineries have started with ozone experimentation as a means of protecting vineyards from pests. A practice still unknown in Italy, but already in use in many European countries. Following the effective disinfection process, ozone has the advantage of returning to be molecular oxygen, leaving no residue neither on the plant nor on the ground.
According to Vasco Boatto (head of the Centro Studi del Consorzio di Tutela Conegliano Valdobbiadene - literally, Centre for Studies of the Consortium for the Protection of Prosecco from Conegliano Valdobbiadene) "environmental sustainability, for Italian wine, is an increasingly important competitive asset and ozone can eventually replace the chemicals used today in the treatment of the vineyards".
O3-Technology plants, entirely designed and manufactured in the Italian head office in the province of Brescia, allow calibrating and monitoring of ozone concentrations during all stages of processing and preservation.
For this reason they will undergo a new series of tests to measure the effectiveness of disinfection of the wine cellar during product processing and storage of barrels: from washing and treatment of grapes with gaseous ozone to dissolve chemical pollutants and reduce microbial loads; to mold prevention in withering process; to the treatment of input and output water from the cellars; to disinfection of the environment used for the production or storage of barrels.
In the disinfection of tanks and barrels, for example, ozone has fared better than other treatments with a considerable saving of time, consumption of water, energy and with considerable benefits even compared to purification plants.
When used under correct concentrations and specific timing, ozone disinfection ensures a profile similar, and in some cases superior, to that of other chemicals, while preserving organoleptic and sensory properties of the products, without residues and ensuring the safety of operators.
